Easy to Make Summer Salads Fit for a Castle

With the end of summer and some of the hottest days of the year approaching everyone is looking for different ways to cool down from this heat. Cold meals and fresh salads are the perfect trick to escape the heat and also incorporate all the in-season fruits and veggies you can find this time of year. Head down to one of our local Port Chester farmers’ markets we told you about and stock up on some of these items!

Pasta salads and variations of garden salads make for a great end of the day refreshers. Pasta salads are great to save time because you can make enough to save so you have plenty of leftovers for a few days. Orzo Salad is just one great pasta salad option. Southern Living recommends an Orzo Salad with Spicy Buttermilk Dressing. With ingredients including cilantro, avocado, and tomatoes you can find everything you need at the local supermarket here in Port Chester, or any of the farmer’s markets taking place this summer in the Port Chester area. Strawberry Tomato Salad is another great summer meal using in season fruits and veggies that are easy to find and will leave you satisfied. Also recommended by Southern Living this salad is great as well if you are looking to throw something together quick and can also make a great side dish to a main meal. Ingredients include multicolored tomatoes, strawberries, fresh basil and if you wanted to spice things up you can add your choice of grilled salmon or chicken to it! Martha Stewart’s website includes a recipe for a String Bean and Arugula Pasta Salad. A mixture of yellow wax beans, green beans, pasta of your choice, olive oil, pine nuts and baby arugula this combination creates a mouth watering cold pasta salad that is perfect for a sweltering hot day. Although the pasta will require a little stove use, the recipe calls for it to be chilled and refrigerated before mixing in all the other great flavorful ingredients.
