Best Pancakes in Westchester

Do your eyes light up when pancakes are brought up? Well, ours do and National Blueberry Pancake Day is January 28th, so we listed our favorite pancake spot in Westchester and a great recipe so you can make blueberry pancakes in your Castle apartment.  We are getting hungry just thinking about these pancakes

 

On the Way Café – A real neighborhood staple, if you’ve been here you know it’s the coziest breakfast/lunch spot in the area. You’ll see familiar faces every time you walk in and the staff is extremely welcoming and friendly. Food options range from pancakes and omelets, to burgers and enormous pastrami sandwiches. The staff proudly incorporates fresh locally sourced ingredients and they put lots of care into their food.  This is the perfect place to stop for a stack of blueberry pancakes! When the weather is nice, walk right across the street to Rye/Playland beach and boardwalk. This stop is not a typical diner/cafe by any means.

Sometimes there’s nothing better than putting on your PJ’s and having brunch in your apartment.  Whether you want to have friends over or cook blueberry pancakes for yourself, this recipe below will fulfil your pancake needs!

 

1)In a large bowl, sift together flour, salt, baking powder and sugar. In a small bowl, beat together egg and milk. Stir milk and egg into flour mixture. Mix in the butter and fold in the blueberries. Set aside for 1 hour.

2) Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
