French Pancake Day is Here – Crêpes!

Celebrate February 2nd as if you were living in France! Many in France believe that the crepe represents the sun and much like the superstitions surrounding our Ground Hog Day, in France it was originally associated with forecasting the upcoming weather. Tradition has it that you hold a gold coin in the hand that you write with and flip the crêpe pan with the other. According to legend, if you catch the crêpe in your pan, prosperity will be yours for the year!

On this day, celebrate by eating crêpes until you burst! You can make a quick batch in your beautiful gourmet Castle kitchen with the simple recipe below. Eat them warm with Nutella or jam while standing at your expansive kitchen island.

 Simple crêpes recipe

-1 cup each cold water and cold milk

-4 eggs

-1/2 teaspoon salt

-2 cups flour

-1/4 cup butter, melted

Place all ingredients in blender or hand whisk at top speed for 1 minute. Cover and refrigerate the batter for at least 2 hours. Brush skillet lightly with oil and heat over medium heat. Pour 1/4 cup of batter into the middle of the pan. Quickly tilt the pan in all directions to run the batter all over the bottom of the pan in a thin film. Lift edges with spatula, and if the underside is a nice light brown, the crepe is ready for turning with your fingers or toss it over with a flick of the pan. Brown lightly for about 30 seconds on the other side. Slide the crepe onto the plate and repeat. Fill with your desires – then roll or fold. Enjoy!
